ISO: Drying hot peppers

I posted this over on the What's For Dinner board, but thought someone here might have an answer, too.

I've been looking for packages of different types of dried spicy peppers, poblanos, anchos, serranos, etc. I can find anchos pretty easily and I know I can get the varieties of fresh ones at our local Mexican flea market.

What I want to know is if I can produce dried peppers from fresh by using our evaporator. DH got an evaporator years ago and we've never used it - he intended it to be for things like jerky, but never got there!

Will the evaporator produce a dried, crackling pepper like you find in Mexican markets?
