Longhorn Rockytop Chicken (like Logan's Restaurant)
Board: Copycat/Restaurant Recipe Requests at Recipelink.com
From: NLW, Columbus OH 12-22-2004
THE secret trick to this chicken is marinating the meat in Italian Dressing for 17 hours! This is key as it makes the chicken so tender it melts in your mouth...it is also what the restaurant does...
Now, you will need:
Chicken Breast
Sweet BBQ Sauce
Peppered Bacon (2 pieces per chicken breast)
Roma Tomatoes
Equal parts Swiss, Cheddar and Jack Cheese, shredded.
Preheat oven to 400. In a shallow pan (I use 13x9 pyrex) cover chicken liberally with BBQ sauce. Bake for 20 minutes.
Meanwhile,
cook bacon to crisp and set aside
halve tomatoes, remove seeds and chop roughly, set aside
Remove chicken from oven, place two pieces of cooked bacon across each chicken breast, top liberally with cheese and tomato. Place under broiler until cheese melts thoroughly.
Serve and ENJOY!
ps: I also garnish with chopped scallions for personal
