ISO: Grandma's Roast Turkey Method

This sounds pretty good, but how much butter & flour do you use? Any specific quantities or do you just eyeball it to make a thick paste? I was planning to roast my turkey in an oven roasting bag.....could it be put in the roasting bag then or just set in the roaster (no bag)?
