ISO: Help! What to feed my vegetarian child?

My seven year old has recently decided to be a vegetarian. She will eat most fruits and vegetables(also milk and eggs) but I am really stumped as to how to make sure she gets enough protein in her diet. She eats peanut butter and some nuts, but the only beans she seems to like are baked beans(like Bush's Vegetarian beans). Anyone have any ideas how to get more protein into her diet? She is a picky eater anyway, which makes it tough. I respect her decision to become a vegetarian, but I need some guidance in how to encourage her to make wise food decisions for good nutrition. Any recommended books, magazines, etc. as well?
