The book you suggested sounds great. I did find one that helped a lot, called "Vegetables Rock," for teenage vegetarians. I will see if I can get a copy of the one you mentioned too, because in my house with four kids, "simple" is key!

My vegetarian child has always loved fruit and vegetables, and never really cared for meat much anyway. I guess I probably worry too much about her getting enough protein, now that I have read more on the subject, but I think I will try some tofu. I used to make a good stir-fry with it but haven't used it in years. I would like to see our whole family eat less meat anyway, so this is a good time to try some new things! Thanks again.
