Recipe(tried): South of the Border Quiche for Theresa

Breakfast and Brunch
Dear Theresa,

This may not be exactly the same recipe, but it is very good, easy to make and always a hit.

SOUTH OF THE BORDER QUICHE

1 large (7 oz) can diced chile peppers (undrained)
1/2 lb Monterey jack cheese
1/2 lb sharp cheddar
1 1/2 to 1 3/4 cups milk
3 eggs
1/2 cup flour
1/2 teaspoon salt

Preheat oven to 350 degrees F.

Spread chile peppers in bottom of a 2 1/2 quart casserole.

Grate Monterey jack cheese and cheddar over chiles.

Mix together milk, eggs, 1/2 cup flour, and 1/2 teaspoon salt. Pour over the chili/cheese mixture.

Bake at 350 for 55 minutes.
