Thansk for your kind comments. I was able to find several copies of the book you recommended available at Amazon Z-shops for very reasonable prices, used. I will try to get a copy.

The meal suggestions you gave are good. I haven't tried TVP yet, so I should. I used to use tofu before I was married, but haven't introduced my children to it. Time to re-visit tofu, I think!
