ISO: Hot Pack v. Cold Pack - How do you choose?
Misc.I'm new at canning vegetables - but I started out with the Ball Canning guide as a reliable source of canning information. While the methods of hot packing and cold packing are described in detail, I can't find any mention of why you should choose one method over the other.
And a related question -- why choose to brine pickles rather than fresh pack (which seems a WHOLE lot simpler.)
