ISO: Jamboto

I saw the show recently. Not sure how it's spelled, but she said the Vegetable mixture was called Jamboto or Jambolto. I guess an italian version of Jambalaya but with vegetables only? I tried searching for it on the web.. but nothing comes up with that spelling. It looked yummy with Eggplant, green peppers, onions,.....all in a large saute pan. Great way to get people, like me, to eat more veggies!
