ISO: JoJo's Santiago Skillet

I've been trying to figure out Jojo's Santiago Skillet since they folded their tent and left Milwaukee! The eggs, ground beef and onions are a given. What remains a "secret" is the cheese and spices. If it was a cheese unique to the recipe that might account for its special flavor. So spices (chives, cheese and ?) remains the the missing link. - "Lost in Waukesha, WI" (but many are)
