ISO: licorice ice cream
Misc.A few years ago I came across a recipe for licorice ice cream in, if I remember correctly, a Paul Hamlyn Australian cookbook. The licorice base was made from melted down licorice toffees and the result was an elegant grey delicious ice cream which sounds incongruous but it was truly spectacular that something so grey could taste so good and of course it was easy to further enhance it for a sophisticated desert with fresh cherries etc. I have managed to find some licorice toffees again but rather that just go ahead and use any old basic ice cream recipe I was hoping to come across this wonderful book again.
There was also a great recipe for almond bread - egg whites icing sugar and whole almonds baked in a loaf tin, then when cool, thinly sliced and browned under a grill. The result was a very special crispy tasty ice cream wafer. I cant find that recipe any longer and I dont know the proportions. Any help would be appreciated.
