Regarding the large loaf not being done, you might want to check your oven temperature to see if it's accurate. For testing I like to use a bamboo skewer instead of a toothpick - it's easier to reach the middle when testing in a deep pan. If the recipe you tried is a new one to you it may have a problem with it. In regards to your small loaf sticking, if your pan tends to stick you can grease the pan then line the bottom with parchment paper or waxed paper before putting in the batter. I hope that's a help.
