ISO: pickled peppers with cabbage
Misc.I took peppers Bell, Pimento, Jalopenos) and mixed them in with onions, carrots, and cabbage (about equal parts of each. I put these in jars - with garlic.
Then I made a brine of 6 cups vinegar; 2 cups water; 2 tablespoons salt and 1 tablespoon of sugar. After boiling this brine, I filled jars with it; then boiled jars in water 15 minutes.
After having done this, I have begun to wonder whether this is safe to eat with the cabbage in it.
I have made this before without the cabbage and it's good.
What is your take on this? Is it safe with the cabbage? Does cabbage can well?
