Amanda of Illinois--Here is my mother's salad dressing recipe for Potato Salad. You can cut back on the vinegar if you think it is to sour but my family likes it like this.
SALAD DRESSING FOR POTATO SALAD
FOR THE DRESSING:
1/2 cup sugar
1/2 cup vinegar
1 egg
1 tablespoon of flour
dash of salt
FOR THE SALAD:
potatoes, cooked and cooled*
hard boiled eggs, chopped
onion, chopped
celery, chopped
Combine sugar, vinegar, egg, flour, and salt in a saucepan. Cook until thick.
In a bowl combine the potatoes, hard boiled eggs, onion, and celery.
Stir in dressing as needed. If you cook a big batch of potatoes you will have to double, or triple the dressing. You don't want it to be to dry but after it sets for awhile it may become to runny so do like I did trial and error.
*I cut my potatoes in cubes but watch them close because you don't want them to done.
