ISO: pressed type cookie ( a white sugary cookie..very delicate)

A friend of mine made these small white cookies, they were a sandwich cookie..white in color,,,with little hole pricks like a fork in them. They were rolled in sugar..very delicate...easily broken. she turned them into a sandwich cookie, and made red and green buttercream icing for the centers. The cookies were only like 2 inches round in diameter. I asked for the recipe, but never got it from her. Im wondering if anyone here, knows what Im talking about? I'd post a picture...but I ate them all..lol. Please help me create them! Thanks....
