ISO: Question about french baguettes

My husband and I are new to Montreal and only here for a short period of time,
and we are really enjoying the food. I have found two different textures of
baguettes. One is the plain variety we can get in the west, but there is a
different version sold mostly in the expensive markets. It has a very different
texture. It is very airy with large holes in it and it is very chew. I really
prefer this to the ordinary ones and I would love to know what the difference is
in the baking of it or the dough. If someone can give me the method and even
the recipe of how to make this delicious bread as I will be moving out of
Montreal in a month and moving to Ontario and I will certainly miss this treat.
