Come to think of it, you are probably right on target about too much oil causing
the gummy top. I definitely think I had too much oil both in and on the dough.
As far as toppings - I used very thinly sliced tomatoes and black olives, which
I love... next time I may try tossing them on halfway through the bake to give
the top crust a fighting chance. :-)
