ISO: Stout Ketchup (Bennigans Resturant)

I was in Bennigans resturant recently and they had an appitizer called somthing like onion haystack.
With it they served "stout ketchup"
The ketchup was GREAT and I would like to make it .... if anyone already has tried to make it I'd love the recipe or tips.
The waiter said it was just guinness and ketchup he thought and no they don't sell it
has anyone heard of it or tried it?
I will give it a try but thought I'd quarrry you all first -- thanks!

Speaking of bennigans I love the flaharty's fish and I don't even really care for fish!
