Yes. You really do whip the cream, then gently fold it in. It lightens the salad mixture.

Another chicken salad recipe that I like is Ramen Noodle salad. It would be a good choice if you think people would like a chicken salad with Asian flavors. I'll repost it for you. You could try both at home before making it for the event you have in mind. The reason I am offering it as an idea is that the noodles would "stretch" the chicken and might be more economical in the long run??!?
