ISO: What do I do with figs?

I have a fig bush that has quite a few figs on it, How do I know if they are the kind that is edible? they smell like a flower and have milk like liquid in them, and how does one know when they are ripe? and how can you dry them? This is all new to me.

Thanks for any advice.
