Recipe: Chicken-Pesto Sandwiches (on with spinach and tomato on focaccia bread)

Sandwiches
CHICKEN-PESTO SANDWICHES

6 skinless boneless chicken breast halves
1/2 teaspoon salt
2 tablespoons chopped fresh oregano (or 2 tsp dried)
1 loaf Italian focaccia bread
1 1/2 cups shredded spinach
1 container refrigerated pesto sauce
6 slices tomato

Set oven control to broil.

Flatten chicken breast halves to 1/4-inch thickness between plastic wrap or waxed paper. Sprinkle with salt and oregano. Place chicken on rack in broiler pan.

Broil with tops 4 to 6-inches from heat 15 to 20 minutes, turning once, until juice of chicken is no longer pink when centers of thickest pieces are cut.

Cut bread horizontally in half. Cut up into 6 wedges. Spread bread bottom with pesto. Layer chicken, spinach, and tomato on bottom wedges. Top with top wedges.

Makes 6 servings
