Thank You: All bakers- flatbread help?

Thank you very much for the recipe I'm sure I'll try it soon along with Alysa's recipe
My question is: after I roll out the balls and then flatten them do I bake them right away or should I cover them and let them rise for few minutes before baking them?
This point seems to confuse me because some recipes say to just bake them right away while some specify to let them rise after shaping them.
help again!!!
