Hi Bonnie
Have you tried to put some oil (perhaps 1or 2 tbsp per recipe) into your pita bread dough?
That gives it more elasticity and it should form a nice pocket. Also, if baking pita breads, form balls and oil the top of them while they rest for a few minutes underneath a towel, then flatten, roll out and let rest again for about 8 minutes or so not too long, otherwise it might not create a pocket. What might help too, ist to turn your baking pan upside down and bake the pitas on that side and don't open the oven door for at least 6 minutes!
