Misc.Dear Gladys, Thank you for the very thoughtful Mother's Day wishes. While neither of my girls will be home, I consider myself very blessed after seeing the mother of one of Emily's high school classmates at the grocery store this afternoon. Her oldest son was recalled to serve another 12 months in Iraq (2nd tour of duty), and 6 months in Kuwait,just this week. Her youngest son (Emily's classmate) left today to serve in Afgahnistan (1st tour of duty). She could barely hold it together. I feel so badly for her:-( As she says, "No one can say that the "their last name" boys haven't done their part". I gave her a big hug, and let her know that I'd be keeping her, and her boys in my thoughts and prayers daily.
As for substitutions for Barramundi, I didn't really know so I called Whole Foods. They told me either trout or talapia. Maybe talapia would be a good substitution for taste but the times we have had it, the filets were much thicker than the Barramundi filets. I guess if I were to advise anyone, I would probably say trout. The Barramundi filets were really quite thin - the reason they cooked as quickly as they did.
While Barramundi is being farmed in MA, I gather that they fly in the fingerlings (Is that the correct term?)from Australia. That means they aren't exactly inexpensive here, but perhaps more affordable than elsewhere.
