Thank You: Gladys. I don't see why it wouldn't work on your grill...

Misc.
Though this recipe is for a Weber charcoal grill, I can't see why any charcoal grill wouldn't work. I do think you need a grill that has a lid but I could be wrong. Just build a fire so you can sear the chops, then put the coals on either side of the grill using tongs to push the coals around so half are on either side of your grill. Put the chops in the middle, not directly over the charcoal, which is now on the far sides of your grill. This will provide you with the indirect heat that the second part of the cooking calls for - kind of like putting the chops in an oven when you close (put the lid on) your grill. And, my dear friend, if I ever get back to Puerto Rico, I think we could probably arrange bringing you a Weber on the plane with us. They are heavy, enameled cast iron, very durable grills. We are using our 2nd one in 32 years so I expect you can get at least 15 years out of one - maybe longer. We, also, 2 years ago, bought a Weber gas grill that DH now uses quite a lot. It, too is well built and, I hope will last us a very long time. Previously, we may have had a Char-broil gas grill, which we bought before Weber started making gas grills, and we used it for many years, probably 10 to 12 years, until we became very concerned with our safety using such an old gas grill. We are a 3 grill family with a charcoal grill, a gas grill and a charcoal smoker - that's how much DH (and his father) love(d) to grill and smoke meat/food!! Honestly, I wish I could grill/barbeque as well as DH does. I think he is truely a master! He grew up at his father's knees and watched and learned, as many of us watched our mothers and learned from them. Last winter (and we did have quite the very cold, snowy winter), he was out on our deck smoking a pork butt so we could have pulled pork sandwiches on Super Bowl day. All I can say is they "were to die for" if you are a smoked pulled pork fan. I made the go-alongs - potato salad, my version of Texas pinto beans, and cole slaw. Ahh...a little bit of summer in the middle of January in New England :->!!!!
