Thank You: Huevos Rancheros - Thanks, Gladys!

Our weather is finally warming up here in the Central Valley and it makes me want huevos rancheros! Reading your recipe for this simple and delicious dish reminded me of a wonderful trip I took to San Blas, Nayarit, Mexico over the New Year holiday many years ago. We took a boat trip up a river into the jungle where we swam in a pond fed by a freshwater spring and were served Huevos Rancheros at a tiny cafe hidden there. It was a most memorable moment. Colorful parrots were flying through the trees, fish were jumping from the spring, and even the feral cats were fat from feasting on the fish trimmings from the restaurant. It was a perfect day! In fact, I think I'll hostess a brunch later this month featuring huevos rancheros and some of our great California-Mexican dishes! Gladys, you do inspire me.
