Thank You: Monica... It's close, but not quite!

Thanks for your reply Monica. I did look back quite a ways on this message board and saw the "Luby's Cafeteria Mixed Squash Casserole", but it is not quite the one I am looking for. It seems to me that the original recipe I was thinking of was somewhat different. I don't remember there being any carrots or zucchini, and I'm sure it had a packaged stuffing mix added in that was actually stirred in with the whole squash mixture - not just the different types of bread sprinkled on top. Of course I do suffer from the dreaded ailment which I call "Mom's disease"... which means that I can't remember a whole lot most of the time anyways, and maybe the recipe isn't how I remembered it.

I sure appreciate you trying. If Gina has no idea about the recipe I'm talking about then I will surely try this "Luby" one as it does sound very similar and certainly very yummy!
