I have some pk tenderloin in the freezer and an orange or yellow pepper in the refrig that needs using. As soon as a couple non-meat days have passed we will dine on this. Thanks! (We had BBQ beef at a Sweethearts Dance last night and try not to have "red meat-days" more than 2 days at the most in a week), but your recipe may put us over the limit this week! It sounds yummy!
