cassava is a root vegetable widely used by our Taino and Caribe Indians. The yuca is specially used in Cuba and in Puerto Rico as part of our daily diet. I like it more than the potatoes, because, even if only boiled it has a distinctive flavor and a lot of fiber in its contents. You can do pasteles de yuca, which by the way are delicious, you can do fried yuca, boiled yuca with sliced red and white onion and a vinaigrette (en escabeche), yuca crockettes which can be simple as the ones mentioned by Carolyn or with additional ingredients like cilantrillo, crushed garlic or ground native cheese. It can be used as stuffing, and then the stuffing will have a heavenly smell and will taste like pasteles, or you can do a mofongo de yuca, stuffed with stewed chicken or stewed seafood. So many deliciuos dishes!
