Recipe: How to Roast Pumpkin or Winter Squash Seeds

HOW TO ROAST PUMPKIN OR WINTER SQUASH SEEDS

Pumpkin or winter squash seeds
Vegetable oil
Salt

Preheat oven to 350 degrees F.

Separate seeds from connecting fibers. Rinse seeds. Pat dry. Spread on baking sheet (or microwavable dish).

Bake for 30 minutes (or microwave on high for 5 minutes). Remove from oven.

Toss seeds with just enough oil to coat and to prevent sticking. Bake for 30 minutes longer (or microwave for 5 minutes) or until golden brown and crunchy.

Sprinkle lightly with salt. Use right away or store in airtight container for up to several weeks.
