Bloomin Onion HELP !!

My Bloomin Onion DID"NT bloom......got a special cutter, used recipe from copy Cat files ( that part was great ) followed all directions but when the onion was added to hot oil, the petals did not open...it did not bloom. Tasted good though...any hints about this ?
