No, I don't really have more time. I just move fast and then leave the eggplant to drain while I'm out. Then when I get home I cook it. But it still takes forever!
Do you remember Celentano's foods? I used to go there with my mom when I was a kid and their store is still a true Italian deli. They sell fried eggplant, sliced length-wise, which is so delicious! My mom cheats and uses that now, but I've copied their method. She laughs and says that our roles have reversed!
