Cake for a Crowd....

I have made cakes for 30 to 100 people almost every week, and I have found that it is easier to make impressive cakes by making a few small ones instead of a big one...If you are expecting 50, figure that you can cut the cake into 12 slices and not appear stingy, and 12 divided into 50 is approxiametly 4 times...don't overdo it...some will not indulge in the cake because they have dietary restrictions...this is always the case with a huge crowd...so average about one slice per person...coming close is perfect here...
I have a recipe for a 6 minute fudge cake that is decadent and simple, that you could easily top with whipped creamed that is whipped with a bit of sour cream...or I have a more complicated recipe, that looks terrific, for a strawberry banana layer cake....both can be topped with whipped cream that has a bit of sour cream in it...let me know if you want either recipe....
In my experience trying cakes for crowds, I have found that large cakes are never as delicious as smaller cakes....so if you have the time, and it doesn't take much more time if you are making one cake...just do all the steps at the same time and you will have enough cakes...
