AJ,: addition of sour cream to whipped

   Unfortunately, AJ, I have never measured the amount of sour cream that I add to whipped cream. But I can tell you that I only add it, and any other ingredients - sugar, vanilla extract, possibly a drop of almond extract - only after the cream has started to create peaks. I would guess that about a tablespoon of sour cream per cup of heavy cream would give it the extra edge that you are looking for. I always add some, and taste it...and if it seems like it needs more, add a bit more...if you overdo it, you can always add a bit more sugar or maple syrup to undo it...
I am also told that a bit of gelatin added to whipped cream after it begins to form folds, helps it to hold its peaks...
