Can potato starch be substituted?

Linda Lou, do you know if I can substitute potato starch for the corn starch or tapioca? I use it for making apple betty, etc. for baking in the oven and get a lovely CLEAR filler with it and have wondered about using it in canning. I find it readily in the Oriental grocery stores. What do you think? Thank you for your response.
