Recipe: Homemade Appel Pie Filling (canning recipe)

If you do not have a water bath canner, any large pot that is deep enough to cover over the tops of the jars with water by 1-2-inches will work. Just use a folded towel in the bottom so they will not break. Also, you will need a lid on the pot. Here is a recipe, it is for apple,but sure you could yuse other fruits as well.

APPLE PIE FILLING

4 1/2 cups sugar
1 cup quick cooking tapioca
1 tsp. salt
2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
10 cups water
1/4 cup lemon juice
2 drops yellow food color (optional)
16 cups peeled, cored, sliced tart apples

Combine first 5 ingredients.Stir in water and cook on med. high heat until thick and bubbly.Cook 2 more minutes. Add apples, stir constantly. Bring to a rolling boil, cook 1 minute.

Use a slotted spoon, take out apples and place in hot sterilized jars. Leave 1/2-inch headspace. Add sauce to each jar. Remove air bubbles by sliding a table knife down the sides of the jars. Wipe top of jar sealing surface with a clean cloth, place lid and ring on. Process in water bath canner for 25 minutes.
