Recipe(tried): Broccoli Salad with Bacon, Raisins and Sunflower Seeds

This is a wonderful salad - everyone loves it. Hope you do, too.

BROCCOLI SALAD


1 small head of broccoli, cut into bite sized flowerettes, then briefly parboiled, drained and put into cold water to stop the cooking. Drain. Note: DON'T overboil!
1/4 cup red onion, slivered
1 cup golden or regular raisins
1/3 cup small seeds (like sunflower seeds or pine nuts, which have been briefly toasted in a frying pan to bring out the flavor and crispness)
4 slices or more of bacon, cooked and crumbled (added just before serving)

DRESSING:
3/4 cup mayonnaise
1/4 cup sugar
2 Tbsp. cider vinegar

Mix sugar, mayo and vinegar in a small bowl.

Combine broccoli, raisins, seeds and onion in a medium salad bowl; add and mix dressing into ingredients in salad bowl and refrigerate at least a couple of hours.

Just before serving, add the crumbled bacon and stir in.
