Color of Lotus-seed Fillings (for Eggy)

Hi, Eggy!

I have never heard of any distinction between dark and light colors with regard to lotus-seed-paste. I've seen huge selections of mooncakes at famous mooncake bakeries (heaven!), but the only varieties were single-yolk and double-yolk, no white or dark.

Perhaps the lightness or darkness of the paste is simply a function of different recipes for the paste, not really varieties of mooncakes.

You're so knowledgeable about Chinese cookery, I figure if you don't know the answer to this one, then no one does!
