Recipe: Difference between White and Normal lotus seed paste (with photos)
Recipe CollectionsHi guys. Really sorry if this news is outdated but there is a very significant color difference between "White" and "Normal" lotus seed paste.
Lotus Seeds has a layer of membrane not much unlike peanuts except that it clings closely with the seed. In the processing and production of Lotus Seed Paste, the removal of the membrane results in Pure White Lotus Seed Paste. This is a tedious process that requires a few days' labourious work. Consequently, Pure white lotus seed paste is more expensive than Normal lotus paste, which doesnt remove the membrane. Pure White Lotus Seeds Paste is currently very popular in Asia. Here in Singapore, we have the
white lotus paste - a pale brown
normal lotus paste - a dark reddish brown
jade (pandan aka screwpine) lotus - green in color
just to name a few. hope this helped enlighten people about the difference between the white n normal varieties. apparently, the White varieties are less sweet too!
