Double- and Single-Yolk Mooncakes
Misc. Thank you, Eggy, for the recipes for mooncake fillings. I bought some wooden mooncake molds in San Francisco's Chinatown and am dying to try baking some mooncakes.
The difference between the double-yolk and single-yolk lotus-seed-paste mooncakes is simple. The double-yolk mooncake contains two salt-preserved egg yolks in the center, surrounded by lotus-seed paste, all wrapped in a pastry crust. The single-yolk mooncake contains only one, as you can see when you cut into it. Because the egg yolks are not mixed into the lotus-seed paste, the color of the lotus-seed-paste filling is the same in the single-yolk and the double-yolk mooncakes.
