maduros, you buy them with the peel almost black (they are full of sugar). Then you peel them and cut them in rounds or slanted. Then you cook them in a skillet at medium high heat with about 1/3 cup of oil. You cook them until they are soft and very sweet. Be very careful to remove them, I prefer a slotted spoon. Then I put them in a serving plate covered with paper towels to absorb the oil.

You can also prepare them in the oven with some sugar, cinnamon and butter over them, but those are not the genuine maduros.
