We also loved the Chicken Fricasse Puerto Rican Style. It was fun to make, smelled wonderful as it cooked and the colors with the roasted pepper and cilantro were so pretty. Definitely a keeper, I would encourage anyone to make it. I didn't find ripe plantains, so will save that for another time. Thanks for the tips and again, Gladys, thanks for a wonderful recipe, keep them coming.
