Emily/MA re: Freezing tofu

Hi Emily:-) I asked this question of Joan, the resident demo lady at Bread and Circus about freezing tofu. Evidently it changes the texture considerably so I have never tried it. I think, however that if you freeze it, you can grate it and use it for the tofu version of egg salad.
