Flapjacks - cookies not pancakes

Here's two:
English Flapjacks
6 oz butter
6 oz brown sugar
8 oz quick rolled oats
pinch salt
Melt butter over gentle heat, then stir in sugar, salt and oats.Mix well. Press into an oiled Swiss roll tin and smooth surface. Bake 375oF 30-35mins. Stand in tin 5 mins before marking 16 squares. Cool completely.
For stickier flapjack, use 3 oz brown sugar and 3 oz Golden Syrup.

English Flapjacks 2
3 oz butter
2 oz brown sugar
6 oz quick rolled oats
1 oz golden syrup
Melt butter, sugar and syrup until sugar dissolves. Cool, then pour over oats in a mixing bowl. Mix well. Press into an oiled shallow 8" tin and smooth surface. Bake 350oF 30-35mins. Stand in tin 5 mins before marking fingers. Cool completely.

These recipes can be varied to taste. I add sultanas [golden raisins] dried apricot or mixed dried fruit to mine. Dates would work. I have also used museli instead of and part of the rolled oats. Molasses or treacle would be worth experimenting with.
