Recipe: Tender Pork Roast Using Boston Butt...

Just saw this message so I know I am late for Christmas! My cousin in Miami, FL told me about her amazing Pork Roast this year for the holidays...she bought a Boston Butt on the advise of the butcher who told her that is the best cut of meat to make a roast because it hardly has any fat.

She marinated it for 3 days in a large zip-lock back with Mojo. Took it out of the bag and placed it in a Dutch oven (the speckled pan with a lid), temp at 350F for 3 hours or so, and it was tender and falling apart. Delicious!

Mojo is that Cuban marinade of sour orange, lemon and mashed up garlic with oregano, salt & pepper. It can be found at latino markets or in the latino section of your favorite grocer. It makes all the difference in the world when it comes to pork.
