This was a vegetarian meal quite by accident. I didn't even realize it until DH came home and said, "Where's the hunk of meat?" :-) I told him that there was no "hunk o' meat" tonight. It was good for us to go without even just for two nights (leftovers last night). We had plenty of food to fill us without having meat. However, the tomatoes with the risotto could easily be served as a side rather than the main dish. We so rarely eat vegetarian meals anymore, now that the girls have "flown the nest." I do plan to make this the next time my "baby" is home, though, since she really still prefers vegetarian meals.
