I made Joy's Easy Cobbler for Easter
Misc.I made Joy's Easy Cobbler for Easter dinner and it was a big hit with a dollop
of Cool Whip on top.
I layered the ingredients in the ordered listed. You sprinkle on all of the cake
mix at once, (as it bakes the cake rises and the top layer of fruit sinks).
I used Stilwell's select peaches (no sugar) 16 oz bag and Jiffy yellow cake
mix(9 oz) (about 1 1/2 boxes, after weighing it I measured and it came to about
2 1/2 c.) I left out the nuts (we are not the big on nuts)
I put it together and in the oven with the fruit still frozen and it took 70
mins at 350 before it looked light golden brown and cooked through to me.
I think I would like to have more fruit next time I make it. With just the two
of us here most of the time I will be making it in a 11x7 glass pan, use a
smaller can of pineapple, maybe the 15-16 oz size, the 2 bags of fruit, just 1
full box of jiffy (9 oz) and the same amount of sugar and butter.
I was going to use dark cherries, but the peaches were on sale and I can't pass
up on a good deal. I will do it with the cherries next time. I was also thinking
that using 1 bag of peaches and 1 bag of raspberries would be interesting,
layering the peaches first and the raspberri
