June, I also have recently discovered the frozen fish at Sam's.

I also used the cod loins and found them delicious. I was able to buy them in a 2-pound sack. A couple of suggestions, I don't know if Sam's changes brands often or not, but some seems to be better than others. Note that the source of the fish is on the bag. Be sure to note the brand you bought and look for it again. I also bought Orca Bay Scallops in a 1.5 lb bag. They are just wonderful with a fresh sweet aroma when the bag is opened. I had never tried orange roughy until I bought it in a 2-pound bag at Sam's and we really like it both ways I have prepared it, one baked with the mayo/parmesan/green onion topping and the other baked in a ratatouille.

I find the fish and scallops both thaw quickly when placed in a plastic bag in a pan of water. Publix also has started stocking frozen fish, I believe theirs is in 10 or 12 ounce packages. When Publix has the good gulf shrimp on sale, I ask for a couple of pounds frozen and keep it frozen to use as needed. It keeps well for a couple of months.

Since much of the fish Publix sells came in frozen, I think we are better off buying fish that was processed quickly and thaw it ourselves than buying it already thawed. I have been happier with the results. Your recipe sounds wonderful, I made a copy.
