Recipe(tried): Baked Cod Loins Dinner

After DH's bypass, I was lamenting not being able to get good codfish down here in FL, and the dietician who was conducting the class steered me to Sam's Club, Frozen Cod Loins in a 4# bag. (I was doubtful to say the least!)

I would never have believed that frozen fish would be 99% as good as fresh, but these truly are. Plus the convenience of having them for a quick easy prep meal is great.

Last night, I took out four of them, thawed them for 10 minutes in cool water, rinsed and dried them. Melted some heart healthy margarine in a shallow baking dish. Then rolled the fish all sides in it, and positioned them for baking.

Then I salted and peppered them. Sprinkled some oregano over the tops, then cut thin slices of tomato and onions and placed over the entire surface of the fish.

Squeezed a little fresh lemon juice over that, then sprinkled a fine layer of Italian-flavored bread crumbs, topping with shredded (not grated) Parmesan cheese.

I baked them in 350 oven, for approx. 30 minutes. It was SO good and fresh tasting. Made parsley potatoes, steamed broccoli and salad to go with it.
