My favorite books on baking

1.If I knew nothing of baking and wanted a good cook book that explained why things happened in baking.I would buy Rose Levy Beranbaum's "The Cake Bible"
Rose is a gifted cookbook author and a scientist which explains why she undrestands the technology of baking so well.

2.I have hundreds of cook books on baking and the one I always use to find a standard recipe for a baked item is Good Housekeepings Cookbook. My copy was printed in 1963 but it stands up to any fancy designer cookbook out there. It's just good sense baking! And The Best of Susan recipe section would be a good place for any starting baker to begin.
